Rusty Russell d0c0c4480a plugins: fix more uninitialized vars in bookkeeper.

Did a sweep to find any others, give this from sanitizer:

Plugin Directory

Any file in this directory which is executable and whose name only consists of alphanumeric characters, space, '.', '-' or '_' will be automatically loaded when lightningd starts (unless suppressed with commandline options).
